Violations: Three high-risk violations, one for improper holding — Beans in container at 70 degrees, thrown out. Two for contaminated equipment — rice bin hand scoop inside. Corrected; Coke nozzles need cleaning. Corrected. One low-risk violation for floors/walls/ceilings — restroom needs self-closing device.

Date inspected: Dec. 13
Violations: Two high-risk violations for improper holding — True reach-in holding eggs at 48 degrees, milk at 48 degrees, food thrown out. Corrected. Cold-holding cheese and ham at 37 degrees; salad bar cheese at 41 degrees. Still need to be corrected. The True reach-in needs service. Do not use until reinspected.

Two violations for poor personal hygiene — washing knife in hand sink; toilet sink water handle not screwed in place. Two moderate-risk violations, one for improper holding — no food thermometers for use, not monitoring temps. One for contaminated equipment — dumping mop water into ware wash sink. One low-risk violation for floors/walls/ceilings — opening in wall below toilet room hand sink, crack in wall in hallway.

Two low-risk violations, one for floors/walls/ceilings — ceiling broken, roof leaking. One for storage — many food items and food-related items stored on the floor.

Violations: Two moderate-risk violations for contaminated equipment — food scales, plates and cups were not properly cleaned and sanitized after use. Improper three-step manual dishwashing process. One low-risk violation for poor personal hygiene — no hair restraints. Required for employees. Employees must have effective hair restraints. Notify NMED by Dec. 20.

Violations: One moderate-risk violation for contaminated equipment — inadequate space for dirty dishes. One low-risk violation for floors/walls/ceilings — toilet door not tight-fitting.

Red Enchilada Restaurant, 1310 Osage
Date inspected: Dec. 11
Violations: Five high-risk violations, two for contaminated equipment — employee was touching cooked tamales with bare hands. Dumped. Can of Raid spray was seen in kitchen. Corrected. Thrown away. Cannot use insecticide spray in kitchen or facility. A professional company must do Pest control. One for inadequate cooking/cooling — Some food items in the reach-in unit are not being cooled down properly before refrigeration. Green chile at 106 degrees, beans at 47 degrees. Corrected. Food items placed on ice bath during inspection. Paper towels were not available for hand sink in kitchen. Corrected. Hand sink in kitchen is also used to store items like cutting board, etc. Corrected. One moderate-risk violation for contaminated equipment — chlorine test strips are not available for the sanitizing solution for the three-compartment sink. Chlorine sanitizing solution was good at 100 ppm. One low-risk violation for floors/walls/ceilings — the wall by the big mixer has a hole. Seal.

One ceiling tile missing, opening in ceiling. One for storage — single-serve articles held in unprotected manner, not inverted.

One for storage — storing thermometer in ice water, must be stored, clean, sanitized and dry. Cease wet storage of all utensils or equipment. Corrected.
