Violations: One high-risk violation for contaminated equipment — Coke nozzles need cleaning. One low-risk violation for poor personal hygiene — hair restraints, all food handlers must wear a cap or hair net.

Dylan’s Sports Bar, 2413 N. Riverside Dr.
Date inspected: Nov. 14, pre-opening
Notes: Equipment will be NSF/ANSI-grade. Walls appear to be easy to clean, non-absorbent. Floors appear to be concrete, sealed. Work in progress, needs concrete, paint. Ceilings appear to be easy to clean, sealed/painted. Hood vent appears to be material that is galvanized. Plan to replace. Two hand wash sinks in use, good. Plan to have soap/towels. Three compartment sinks, possibly two planned. Plan on having at least one vegetable-type food sink. Plan on servicing grease trap, dirty. Water heating capacity, may be at capacity. May need more capacity. Ensure hot water is always available. Water use may require additional hot water production. Work needed on facility. Still in progress. Application in progress. Notes: Opening inspection, no food present yet. Hand wash sink, operable, hot and cold water OK. Soap and towels. Three compartment sink, operable, air gap OK. Refrigeration, in place. Commercial-grade NSF two upright units, Kelvinator freezer and Kelvinator refrigerator. Prep/make table, turbo air. Range/stove still needs some cleaning/seasoning. Hood vent system, plan to replace within one year. Approved to open with current non-approved model/material. Fryers, NSF/commercial. Facility coded red/green for PHF/ready-to-eat. Floors need final cleaning, mopping. Walls appear overall OK. Some construction still occurring. Ensure all surfaces are cleaned prior to opening. City approved, gave occupancy today. Facility plans to open Saturday for food service.

Violations: One moderate-risk violation for contaminated equipment — home-type Crock Pot in use. Need to replace with commercial ANSI/NSF type.

JoJi’s Sushi and Teppan, 1508-B N. Riverside Dr.
Date inspected: Nov. 28
Violations: One high-risk violation for contaminated equipment — auto dishwasher not sanitizing. Corrected. Air bubble. Ensure equipment sanitizes 100 percent of the time. One moderate-risk violation for storage — chicken that is repacked, trimmed and frozen should be labeled with product type, date, if not kept in original container. One low-risk violation for poor personal hygiene — sushi chef not wearing hair restraint upon beginning of inspection. Corrected. Ensure that all staff in food prep/service area wear hair restraints.
Recommendations: Ensure that chefs’ metal knife scabbards/sheaths are washed, rinsed and sanitized. Ensure sanitizer cycle in the auto dishwasher stays operational.

Little Caesar’s Pizza #504, 745 N. Riverside Dr.
Date inspected: Nov. 28
Violations: One high-risk violation for contaminated equipment — can opener dirty. Corrected. One low-risk violation for poor personal hygiene — employees/staff must wear hairnets, caps, etc., during food prep services.
Notes: Facility overall OK, continue to keep food surfaces clean, i.e. can opener, container of corn meal.

Pat Montoya Family Orchard, C.R. 59, House #249, Velarde
Date inspected: Nov. 16
Violations: None
Notes: Facility/equipment check, no cider production during inspection. Discussed potential modifications to make unit accessible and easier to clean. Plans to remove/make elevator freestanding for access to unit shredder. The unit shredder is planned to be modified for access or ability to be able to be washed, rinsed, sanitized. Food contact surfaces, i.e.: plastic, foam cushioning, is not food-grade. Plan to replace before next pressing. Also need to sanitize apples in a wash, is water samples ever depict or show coliform/E-coli. Water results, copy provided to NMED — OK. It would appear that the equipment modifications may be suitable, hence, provide drawings, planned changes. Address contact surfaces of sorter. Power wash the removal of gunk off the unit, brushes, surfaces.

Santa Fe

Angel’s Bakery, 394-B Los Pinos Road
Date inspected: Nov. 30
Violations: One low-risk violation for storage — jacket was hanging in the dry storage shelf. Provide an area for employees’ jackets.
Notes: The three-compartment sink was not in use during inspection, but chlorine and test strips were available. The wall by the three-compartment sink has been sealed with easily cleanable material. Violation from last year.

Notes: Facility looks very clean. Cutting boards, equipment surfaces look very clean.

Lan’s Vietnamese Cuisine, LLC, 2430 Cerrillos Road
Date inspected: Nov. 29
Violations: One high-risk violation for poor personal hygiene — paper towels were not available for the hand sink. This was corrected during inspection. Two moderate-risk violations, one for improper holding — thermometers/stem were not available to monitor hot foods. One for contaminated equipment — dishwasher top surface is filthy. Clean.
Notes: Change all the dish baskets in the kitchen. They look old and stained. Replace within one week.

Violations: One high-risk violation for improper holding — loaves of baked products are not covered. Temporarily corrected. Provide sneeze guards or transparent covers for all the baked goods. One moderate-risk violation for contaminated equipment — QAT test strips are not available. One low-risk violation for storage — employees’ jackets were hanging in the dry storage shelves. Provide employees with dressing areas.

Date inspected: Dec. 4, pre-opening, opening
Violations: None
Notes: Refrigerator temp above 60 degrees. Improper air gap on three-compartment sink. No food thermometers. One on hand was inoperable. Bare wood shelves must be painted. No trash cans near hand sinks. No base coring. Ceiling not smooth, absorbable. Toilet room door not self-closing. Rear door not sealed at bottom.

Saveur Restaurant, 204 Montezuma

Notes: This facility is one of the cleanest restaurants in Santa Fe. Everything looks very clean. Employees’ aprons look so clean. Employees wear short hair and hats.
