Date inspected: Nov. 13
Violations: One moderate-risk violation for contaminated equipment — one of the long cutting boards in the kitchen is discolored and stained. Clean and sanitize. Two low-risk violations for floors/walls/ceilings — women’s restroom did not have hot running water. Fix. The wall by the ketchup dispenser in dry storage area is filthy. Clean. The food above the dishwasher has lots of black dust smoke. Clean this area.

Date inspected: Nov. 9, opening
Violations: None
Notes: Uses the Shure Bread kitchen facility as the commissary kitchen. Wedding cakes and other food service menu as ordered by clients. Cantrop equipment, steam table and chafing dishes are available to transport and heat foods at the party.
Status of establishment: Approved, OK to operate, issue permit.

Sushi Land East, 60 E. San Francisco St.
Date inspected: Nov. 13, follow-up
Violations: One low-risk violation for administration — food permit posted has expired.
Notes: The equipment and refrigeration unit surfaces have been cleaned up. That includes ice machine surface. A check for $225 was received for the food permit fee for year 2012/2013. All food items have been transferred to the NSF-approved under counter unit. That non-ANSI unit is not being used. Trash container surfaces have been cleaned, too. Kitchen looked clean during inspection. Kitchen floor looks clean.

Violations: Six high-risk violations, one for improper holding — cooked beef, diced, 75 degrees, in refrigerator. Hot holding cooked pork, 130 degrees; beef 110 degrees. One for contaminated equipment — No sanitizer prepared for use. Three violations for poor personal hygiene — hand sink filled with unclean utensils; no paper towels at hand sink; faucets leak, not operable. One moderate-risk violation for poor personal hygiene — Hand sink filled with unclean utensils. Five low-risk violations, two for floors/walls/ceilings — floor covering worn in aisle-way; opening to exterior not screened; One for plumbing/waste disposal — trash receptacle overflowing onto floor. One for storage — Tomatoes held on floor (in box). One for ventilation — prep area lights out of order, temp light not shielded.
Status of establishment: Unsatisfactory, follow-up. Facility is closed and not allowed to sell or serve food until all items are corrected and follow-up inspection done.

Taqueria Adelita, 3565 Cerrillos Road
Date inspected: Nov. 13
Violations: Two high-risk violations, one for unsafe sources — more than six food items in refrigerator prepared 24 hours or more ago, with no date marked. Corrected. One for improper holding — thawing chicken in non-running cold water. Corrected. One low-risk violation for administration — expired permit posted. Post new permit.

Taqueria Argentina, 2045 Cerrillos Road
Date inspected: Nov. 14
Violations: One high-risk violation for contaminated equipment — beef in refrigerator at 57 degrees, prepared, cut and packed 18 hours prior. Item destroyed. Corrected. One moderate-risk violation for improper holding — thermometer not calibrated. 10 degrees off. Corrected.
Status of establishment: Approved, no follow-up required.

The Chocolate Smith, 851-A Cerrillos Road
Date inspected: Nov. 13
Violations: Two moderate-risk violations, one for improper holding — thermometer was not available for the upright freezer reach-in unit. One for contaminated equipment — the sanitizer was not going through the tube to the dish machine. Fix immediately. Sanitizing solution was available. Also, test strips are available. One low-risk violation for administration — food permit fee posted has expired since November 2011. Make sure that current permit is always posted. Corrected.
