The following restaurant inspection reports were provided by the New Mexico Environment Department.

Santa Fe

Café Castro, 2811 Cerrillos Road
Date inspected: Nov. 8
Violations: None
Notes: Dishwasher sanitizing solution 75 ppm, good. Test strips are available. Kitchen is kept very clean all the time. Good process of cooling down food. Cutting boards and equipment surfaces look clean. Store raw meats at the bottom shelves of refrigeration units.

Domino’s Pizza, 604 N. Guadalupe St.
Date inspected: Nov. 6
Violations: Two moderate-risk violations, one for improper holding — food-grade thermometer needs to be calibrated; one for contaminated equipment — pizza cutter unsanitary condition; sandwich cutter unsanitary condition, broken.

El Merendero Processing, 1514 Rodeo Road
Date inspected: Nov. 7
Violations: One low-risk violation for ventilation/lighting — light out of order in the walk-in refrigerator.

Flying Tortilla, 4250 Cerrillos Road
Date inspected: Nov. 6
Violations: One moderate-risk violation for contaminated equipment — can opener was not cleaned and sanitized after use. One low-risk violation for ventilation/lighting — lights inside walk-in refrigerator and freezer out of order.

French Pastry Shop, 100 E. San Francisco St.
Date inspected: Nov. 8, follow-up
Violations: One moderate-risk violation for contaminated equipment — the non-NSF under counter refrigeration unit has still not been replaced or removed. Facility was told to move all the milk that was stored here. All the food items here were removed. The unit was not holding proper temperature. Air temperature was 49 degrees. Do not ever use this under counter refrigeration unit again. It is old, not NSF and is not holding proper temperatures.

Violations: None
Notes: The three-compartment sink was not in use during inspection, but chlorine bleach and test strips were available. Kitchen looks very clean.

N.Y. Deli, 420 Catron St.
Date inspected: Nov. 8
Violations: Two high-risk violations, one for improper holding — food thermometers inaccurate, need to be calibrated. One for contaminated equipment — unsanitary wiping cloths/ no presence of sanitizer. Two moderate-risk violations, one for improper holding — food thermometers inaccurate, need to be calibrated. One for contaminated equipment — many food utensils, scales and food equipment unsanitary, were not cleaned and sanitized after use.

Ponce de Leon Retirement Community, 640 Alta Vista
Date inspected: Nov. 6
Violations: One moderate-risk violation for plumbing/waste disposal — the plastic big trash buckets surfaces are filthy.
Notes: Post the food permit in the dining area, not in the office. Generally, kitchen looks good. All food items are dated and labeled, including dry storage foods.

Violations: One high-risk violation for inadequate cooking/cooling — improper cooling process of potentially  hazardous food. Corrected. One moderate-risk violation for improper holding. One low-risk violation for ventilation/lighting — light cover dirty in the kitchen.

Red Lobster, 4450 Cerrillos Road
Date inspected: Nov. 6
Violations: One high-risk violation for improper holding — improper holding temperature, 57 degrees for sour cream. Corrected. One moderate-risk violation for improper holding — food-grade thermometer out of order. Thermometer needs to be calibrated. Temperature charts must be completed. One low-risk violation for floors/walls/ceilings — tile floor broken in the kitchen.

Rosemont Assisted Living, 2691 Galisteo St.
Date inspected: Oct. 29
Violations: One high-risk violation for inadequate cooking/cooling — Using shell eggs cracked in container for next day food service. Use pasteurized eggs or some other approved product or cook and serve. One low-risk violation for ventilation/lighting — inadequate light in cooler.
Notes: Facility must keep cooler, cold food item log for all prepared foods or re-packaged for one year or next inspection. Facility must test and log sanitizer concentrations three times daily for quat and chlorine.
