The following restaurant inspection reports were provided by the New Mexico Environment Department.

Los Alamos

Elk’s Lodge, 1600 Trinity Dr.
Date inspected: Sept. 9, complaint
Violations: None
Notes: Meat was brought from Matthew’s Meat Processor on Friday, left at 4 p.m. The pig was butchered and when they picked it up, they had a large metal tub. They placed a tarp inside, placed bags of ice and them placed the pig on the ice, then placed bags of ice on top of the pig. Covered with tarp. When they picked up the pig, it didn’t appear to be cool to the touch. They transported it to Los Alamos, which took approximately 13/4 to two hours. They immediately brought in the pig and began cutting up, unwrapped it and placed it in the refrigerator. Portion by portion got cooked. During cooling, they cooked for an hour at 160 degrees. The servings of food were picked up by some firefighters and taken back to the station. Approximately 30 out of 37 got ill (diarrhea). All ate about 5-6 p.m. Most got ill by 4-5 a.m. USDA will be contacted to investigate Matthew’s Meat Processing in Belen. Elk’s Lodge has been doing this for some time. This has been done 23 other times (approximately 20 years).

Hot Rocks Java Café at L.A. Medical Center, 3917 West Road
Date inspected: Sept. 28
Violations: Three high-risk violations, two for improper holding — prep True refrigerator is not maintaining temperatures of 40 degrees or below. Must call for re-inspection after being serviced and prior to use; prep refrigerator, True above cheese 44 degrees, ham 45 degrees, tuna 46 degrees. Below display refrigerators, Beverage Air juice at 32 degrees, True refrigerator milk at 35 degrees. Food tossed. Corrected. One moderate-risk violation for contaminated equipment — cutting board needs to be replaced. Grooves are too deep. Surface needs to be smooth and easy to clean.

Subway, 1350 Central Ave. #104
Date inspected: Sept. 27
Violations: One high-risk violation for contaminated equipment — hot holding, spaghetti sauce at 146 degrees, meatballs at 155 degrees, chicken at 129 degrees. Steam table needs more water to maintain temperature above 140 degrees. One moderate-risk violation for improper holding — need thermometer inside walk-in refrigerator and freezer. Corrected.

Notes: Hand wash sink OK, needs to have drain cleared. Slow to drain, but operational. Please be sure that students, teachers or anyone helping in the kitchen always wears proper hair restraints at all times. Especially the students helping. Facility overall OK, clean, neat. Overall good job.

Status of establishment: Facility closed under Javier Sanchez management. Facility may re-open under someone else. Sanchez advised NMED that he is out of the facility at this time. Closed out.

Mariscos La Playa, 1213 N. Riverside Dr.

Violations: Two high-risk violations, one for unsafe sources — manager has the raw oyster tags correctly filled and in order. One for improper holding — hot holding of warmers. Corrected.

Notes: Staff wearing clean uniforms, aprons, hairnets, gloves during inspection. Need to acquire test strips/sanitizer for both chlorine and high-temp dishwasher. Overall clean, neat facility. Need to post permit in a visible location.

Violations: One moderate-risk violation for improper holding — stem thermometers are needed to monitor hot food temperatures. The ones in facility are not working. Three low-risk violations, one for administration — the permit posted has expired since June. Post the current one. Two for floors/walls/ceilings — the rusted tiles in the men’s restroom still have not been fixed; the wall by the hand sink does not have suitable match.  
Notes: Do not use the deodorized bleach. Buy regular bleach.
