The following restaurant inspection reports were provided by the New Mexico Environment Department.

Española

Española Headstart, 340 N. Railroad Ave.
Date inspected: Sept. 20
Violations: None

Española Hospital, 1010 Spruce St.
Date inspected: Sept. 19
Violations: None

Española Senior Citizens Center and catering, 410 Hunter St.
Date inspected: Sept. 20
Violations: One high-risk violation for contaminated equipment — scoop inside, contaminating the salt. Corrected.
Status of establishment: Approved, no follow-up required.

ETS Fairview Elementary, 1000 Zuni Lane
Date inspected: Sept. 21
Violations: One high-risk violation for plumbing/waste disposal — two-compartment sink drain needs immediate repair. Drain broken, issued major notice of violation.
Note: All staff were observed wearing gloves, hair nets/restraints and clean uniforms.

James Rodriguez Elementary, 333 Coronado St.
Date inspected: Sept. 20
Violations: One high-risk violation for contaminated equipment — sanitizer > 200 ppm. Corrected. One moderate-risk violation for administration — no valid permit expired.
Notes: Must have dishwasher serviced, do not use until re-inspection done.

Steve’s La Cocina, 310 Old Los Alamos Hwy.
Date inspected: Sept. 19
Violations: Two high-risk violations for improper holding — cheese and salsa held at 53 degrees in prep refrigerator on top. On bottom, cheese was at 57 degrees, thermometer reads 57 degrees. Hot-holding, green chile was at 155 degrees and beans were at 146 degrees. One moderate-risk violation for contaminated equipment — GE refrigerator is not NSF. Can’t use/must be replaced with NSF. Two low-risk violations, one for floors/walls/ceilings — doors  must close by themselves. Restrooms need self-closing devices on doors. One for ventilation/lighting — hood/vent filters are missing. Must be present to avoid kitchen fire.
Notes: Prep refrigerator isn’t working properly. Can’t use. Condemned for now.

YDI Fairview Headstart, 1000 Zuni Lane

Notes: Facility doing well as always. Staff wearing clean, neat aprons.

Santa Fe

Allsup’s, 2007 Calle Lorca
Date inspected: Sept. 24
Violations: One high-risk violation for improper holding — sausage in cooler was at 48 degrees. Four-and-a-half links destroyed. Items must not be thawed out at room temperature or held over 30 minutes, when preparing items. Barbecue beef was at 132 degrees, item reheated to 165 degrees. Microwaved food items must rest for one to two minutes before checking temperature. Corrected. One moderate-risk violation for improper holding — food thermometer inoperable, battery low, not calibrated. Replace with auto shut-off, fast-read stem thermometer. Must use daily, not monitoring food temps. Two low-risk violations for floors/walls/ceilings — floor drains and floor around them not cleaned at  adequate frequency. Not clean to sight. Improper ceiling tile above ice bagging area.
Notes: Inadequate hot water supply, hand and ware wash sink tested at 90 degrees until 15 minutes, for water heater to recoup, tested at 120 degrees.

Café de Artists, 223-B Canyon Road
Date inspected: Sept. 18
Violations: One moderate-risk violation for contaminated equipment — chlorine test strips are not available. Provide.
Notes: Facility uses plastic/paper disposable single-service products for serving. Chlorine bleach is available. Reminder that food establishment permit will expire at the end of the month.

Casa Chimayó, 409 W. Water St.
Date inspected: Sept. 18
Violations: One low-risk violation for plumbing/waste disposal — the pipes from the hand sink and dishwasher are touching the floor drain.

Del Charro, 101 W. Alameda St.
Date inspected: Sept. 24
Violations: One high-risk violation for  inadequate cooking/cooling — hot food item not cooled properly before refrigeration in walk-in cooler. Corrected. Temperature at 52 degrees. Bar under counter unit air temperature was 39 degrees. One moderate-risk violation for contaminated equipment — the under counter refrigeration unit surfaces in the enclosed patio area was filthy. Corrected.
Notes: The dishwashing sanitizing solution is good at 200 ppm. Chlorine test strips are available. Provide a splashguard between the ice machine and the hand sink in the bar.

IHOP, 3301 Cerrillos Road
Date inspected: Sept. 20
Violations: Three moderate-risk violations for contaminated equipment — the sanitizer for the dishwasher is not dispensing from the tube. Test strips for both chlorine and QAT solutions were not available. Cutting boards in the facility are all old and stained. Replace. One low-risk violation for administration — food permit has been expired since October 2011. Payment of the 2011/2012 permit must be received by Sept. 24 before 5 p.m. Also, the next payment for permit fee is almost due by the end of October.

McDonald’s, 3299 Cerrillos Road
Date inspected: Sept. 20
Violations: One low-risk violation for ventilation/lighting — one of the light bulbs in the walk-in freezer does not have covers.

Status of establishment: Approved, OK to operate, issue permit. Change of location for facility.

Shohko Café, 321 Johnson St.
Date inspected: Sept. 18
Violations: Three low-risk violations, one for administration — the food permit posted expired in August. Corrected. Two for storage — employee jacket was hanging on the dry storage food shelf. Boxes of oil stored on the floor. Lift up so floors can be seen.
Notes: The wall by the dishwasher has been retiled. Kitchen looks very clean this year. Cutting boards are clean. Equipment surfaces are clean, even trash container surfaces were clean.

Sweeney Headstart, 501 Airport Road
Date inspected: Sept. 24
Violations: One low-risk violation for floors/walls/ceilings — the floor tiles in some areas of the kitchen are torn. Please replace.

Walter Burke Catering, 1204 Calle de Commercio
Date inspected: Sept. 24
Violations: Three moderate-risk violations, one for improper holding — food-grade thermometers need to be calibrated. Two for contaminated equipment — meat slicer, food containers were not properly cleaned and sanitized after use. Improper three-step manual dishwashing. Two low-risk violations, one for storage — food stored on the floor. One for ventilation/lighting — vent hood filter broken.
