Date inspected: July 23, opening
Violations: One high-risk violation for plumbing/waste disposal — icemaker, three-compartment sink and dishwashing machine piping must be two inches above the floor drain. Corrected.

Notes: Good sanitizer concentrations. Very clean and well-managed food facility.

Best Western Plus Inn of Santa Fe, 3650 Cerrillos Road
Date inspected: July 18
Violations: One high-risk violation for poor personal hygiene — soap was not available for the hand sink in the kitchen. One low-risk violation for ventilation/lighting — the kitchen room is not properly ventilated. Very hot in there. Fix immediately, within 10 days.

Violations: One high-risk violation for poor personal hygiene — no hand sink in ware wash, prep area, only one hand sink in cook/prep area. Provide a better plan via mail, fax or email to install by July 31. One moderate-risk violation for contaminated equipment — dirty dishes held on floor. Inadequate drain board space for dirty dishes.

Violations: One high-risk violation for improper holding — hamburgers at 127 degrees, taco filling at 144 degrees, chicken at 145 degrees, tamales at 122 degrees. Items reheated to 165 degrees immediately. Corrected. Facility has accurate digital thermometer to monitor temperatures. Beef jerky not allowed to be served or sold until operation’s plan is improved. Two low-risk violations, one for floors/walls/ceilings — area behind the dish machine needs cleaning. One for ventilation/lighting — cooler has inadequate light.

Notes: Things are being done right. The steam table and the ovens are one to make sure that proper hot holding temperatures are maintained. Need a hot holding temperature log sheet for one week. The floor tiles that were loose in the dry storage room have been replaced. The three-compartment sink has not been fixed yet, waiting on the ordered parts.

Thunderbird Bar and Grill, 50 Lincoln Ave.

Violations: One low-risk violation for storage — the frozen paddles for cooling down hot foods were stored on the floor.
Notes: Reopening after an extensive remodeling of the whole facility. Make sure that paper towel dispensers are mounted on hand sink before officially opening.

Notes: Refrigeration unit has not been fixed. It is still in the process of being done. Waiting for the purchase order. This True Reach-In unit was locked and there are no food items stored in it. Sign was posted for employees not to use it. Adequate refrigeration units are available for the facility.

Notes: Addition of a new bar area. Under counter refrigeration unit in bar was at  40 degrees. New hand sink and new shelves for glasses. Additional seating area of about 20 more people. Expansion of the restaurant area that now includes bar section. OK to operate. Existing facility.
