The following restaurant inspection reports were provided by the New Mexico Environment Department.

Santa Fe

Bamboo Asian Cuisine, 2400 Cerrillos Road
Date inspected: June 25
Violations: One high-risk violation for poor personal hygiene — hand sink in sushi area used for other purposes. Corrected. One moderate-risk violation for contaminated equipment — washing dishes in prep sink. Move sinks to appropriate area. Three low-risk violations, one for floors/walls/ceilings — base coring broken in some places; two for ventilation/lighting — inadequate light in proper, ware wash, cooler and storage areas; grease dripping from fire suppressions pipe in vent hood.
Status of establishment: Approved, no follow-up required.

Burrito Familiar, 3908 Los Milagros
Date inspected: June 26
Violations: Three high-risk violations, one for improper holding — food temperatures in the under counter refrigeration unit are not holding proper cold holding. Refrigerator was not connected; two for poor personal hygiene — no paper towels were available for the hand sink; the three-compartment sink faucet is leaking, fix.

Burrito Familiar, 3908 Los Milagros
Date inspected: June 27, follow-up
Notes: Under counter refrigeration unit air temperature was at 37 degrees, tomatoes in it were at 38 degrees, mayonnaise was at 38 degrees. Unit is holding proper cold-holding temperature. Must be plugged to electricity at all times. Paper towels have been provided for the hand sink. The water leak in the three-compartment sink has been fixed. Adequate hot and cold running water was available. Unit now uses electricity instead of generators.

El Farol Restaurant and Lounge, 808 Canyon Road
Date inspected: June 26
Violations: One high-risk violation for storage — employees were touching/slicing breads with bare hands. Corrected. Gloves were provided. Three low-risk violations, one for floors/walls/ceilings — the wall by the dishwasher is filthy. Clean; one for storage — bags of loaves of bread were stored on the floor. Corrected; the bar floor is holding water. No sealed. Have this fixed within three months.

El Tesoro Café, 500 Monte Rey
Date inspected: June 25
Violations: One high-risk violation for improper holding — improper holding temperature of potentially hazardous food. One moderate-risk violation for improper holding — inaccurate food-grade thermometer, needs to be calibrated. One low-risk violation for ventilation/lighting — light unprotected in the kitchen, no protective shield.
Status of establishment: Approved, no follow-up required.

Hacienda Doña Andrea, 98 Vista del Oro
Date inspected: June 29
Violations: One high-risk violation for contaminated equipment — need to connect sanitizer to dishwasher. No foods being prepared at time of inspection. One low-risk violation for floors/walls/ceilings — weather strip back door.
Notes: Facility is now used for catering hall, primarily. Kitchen is very clean.

High Feather Ranch Bed and Breakfast, 29 High Feather Road
Date inspected: June 29
Notes: Attempted inspection. Facility was closed. Will make appointment for next month.

Jalapeños mobile unit, 4430 Airport Road
Date inspected: June 27, follow-up
Violations: Five high-risk violations, one for unsafe sources — food items not dated, cooled pork and rice; three for improper holding — inadequate refrigeration for inventory, two bags of cooked rice, one in refrigerator undated (cooked today), another in refrigerator in storage and dated 6/24/12, not rotating inventory; food in frozen condition. Remove from facility within five days; one for other — non-NSF freezer in use in facility. One moderate-risk violation for animals/vermin/openings — storage room opening to outdoors not properly screened with mesh, unit exterior door is also improper.

La Casa Sena, 125 E. Palace Ave.
Date inspected: June 28
Violations: One high-risk violation for poor personal hygiene — paper towels were not available at paper dispenser. Corrected. Two moderate-risk violations for contaminated equipment — ice scoop was placed on dirty surface in ice machine downstairs; QAT test strips available are too old and discolored. One low-risk violation for ventilation/lighting — exhaust hood filters are very greasy. May have to clean two times a week instead of once.

Los Cuates at the Lodge, 750 N. St Francis Dr.
Date inspected: June 25, follow-up
Notes: Walk-in cooler is still not holding proper cold-holding temperature. Air temperature is at 52 degrees. All the food items have been removed and placed in the other coolers. Allied Refrigeration Company was working on it at inspection time. Will call to let inspector know if fixed. Cutting boards have been ordered. The big mixer surface has been cleaned. Metal shelves storage has been provided.

Santa Fe Capitol Grill, 3462 Zafarano Dr.
Date inspected: June 27
Violations: One high-risk violation for inadequate cooking/cooling — some of the prepared food items in the cooler were not holding proper cold holding. Rice was at 58 degrees, beans were at 47 degrees. Corrected, opened up and place in ice bath. One moderate-risk violation for contaminated equipment — ice machine surface is filthy. Clean.
Notes: Get some frozen paddles to be used in cooling. Dishwasher sanitizing solution is at 100 ppm. QAT sanitizing solution is at 200 ppm. Test strips are available. In the freezer units, ready-to-eat food items must be separated from frozen, raw meats and seafood at all times. Generally, kitchen looks good.

Santa Fe County Youth Development, 4250 Airport Road
Date inspected: June 25, second inspection request
Violations: One high-risk violation for plumbing/waste disposal — the three-compartment sink drain is not draining. Leaking underneath. Corrected. Two low-risk violations for floors/walls/ceilings — the floor in the dry storage room has some tiles that are loose and stained. Replace; the wall by the three-compartment sink is cracked. Fix.
Notes: Kitchen was not properly equipped to handle emergencies. Stoves/oven turned off. Only steam tables were available. Steam tables were being used to heat up foods. Steam tables are used to maintain temperatures, not to heat up foods. These foods were cooked in the oven and reheated: gravy at 173 degrees and chicken patties at 163 degrees, carrots at 163 degrees. From now on, temperature logs of all food items both cold and hot must be kept. Fax these logs weekly to the NMED office. Provide logs before it leaves main kitchen and also when it gets here. Mandatory training for this facility will be scheduled. Stoves, oven must be turned on at all times when facility is in operation. Even though this is now a satellite kitchen, food cooked and brought over here from the Adult Detention Kitchen should be kept ready to handle proper cold and hot holding temperatures.
