Violations: Two high-risk violations for improper holding — The two under counter refrigeration units are not holding adequate cold-holding temperatures. Pesto sauces at 46 degrees; sour cream at 45 degrees; one for poor personal hygiene – hand sink in kitchen is placed next to the two-compartment sink used for cooling hot foods. No barrier between the two sinks. Provide a splashguard within one week.

Notes: The two  under counter refrigeration units have been fixed and it is now holding adequate cold holding temperatures. All violations noted during regular inspection have been corrected.

Notes: Met with David Segura from the New Mexico Pest Control Company and the owners of the facility. He explained the process he is using. Gets bait in walls and ceiling and floors. Contract was signed for six months. At that time, there will be a reassessment. No roaches were found during inspection. Temporary splashguard has been put in the hand sink area.
