The following restaurant inspection reports were provided by the New Mexico Environment Department.

Española

Delancey Street Catering, 137 Old Alcalde Road
Date inspected: June 11
Violations: Five high-risk violations, one for unsafe sources — pork sausage, home-packed/processed, does not appear to be from approved source. No sign of any USDA-type stamp. Remove from use if not approved sources. Raggedy Creek Processing, Crowell, Texas, do not use for catering process/preparation; one for improper holding — mashed potatoes holding at 111 degrees, corrected by advising staff to heat to 165 degrees for 15 seconds and then holding at 140 degrees; one for contaminated equipment — auto dishwasher not dispensing sanitizer. Need to repair/correct ASAP and/or use three-compartment sink in meantime; two for poor personal hygiene — no disposable towels present at hand wash sink, corrected; and soap not present at hand wash sink. Corrected. One moderate-risk violation for contaminated equipment — home-type equipment should not be used for catering end of the food process or preparation. Pleas ensure that only home-type environment foods still used here. Note: Basic food training is essential and necessary for this facility for both home environment and catering.

Lowe’s SuperSave Bakery/Deli, 930 N. Riverside Dr.
Date inspected: June 13
Violations: One high-risk violation for improper holding — sealed meat packs between 45-53 degrees, corrected by removing from top shelf of display unit. Refrigeration needs service. Two moderate-risk violations for other — ceiling tiles moldy, dingy and dirty. Need to clean and paint or replace. Very filthy. Floors also need maintenance, lots of grease and wax built up, looks filthy/dirty. Walls also need cleaning. One low-risk violation for storage — boxes of food on floor in walk-in unit. Need to be six inches off the floor.
Notes: Facility needs to clean and maintain refrigeration equipment. Must be able to hold at 41 degrees or less. Staff unsure of proper holding temperature requirements, need training.

Violations: None
Notes: No high-risk violations here, keep up the good work. Facility doing very well. No foods stored on the floor, kept six inches off the floor.

Pizza Hut/Wing Street, 644 Riverside Dr.
Date inspected: June 13
Violations: One moderate-risk violation for contaminated equipment — fan filters on pizza oven have dust/mold. Need to clean, replace ASAP.
Notes: Employees wearing clean uniforms, ball cap/hair restraints. Restrooms clean, sink operable, hot/cold water present.  Soap and hand dryer operable. Facility doing good overall.

Wendy’s, Double Cheese Corp., 1620 N. Riverside Dr.
Date inspected: June 13, complaint
Notes: Complaint investigation because customer found tooth in fries, later claimed burger. Brought issue to manager who refunded money and took picture of tooth. Note: the tooth appeared to be a baby tooth, no root structure associated with tooth. Manager interviewed her staff, no one claimed they lost any teeth or deposited in the food. Manager states bag of fries expended from today’s lunch rush. Claims no further complaints. Food temps OK, meat cold-holding at 41 degrees; fries at 192 degrees, burgers made to order. Fries come from frozen state, poured into dipping net and fried in 350-degree oil, held until served. Note: 350 degrees is extremely hot oil — potential to split or break teeth, as per manager. Facility overall clean, neat, considering after lunch rush. Please keep an eye of French fries for any foreign matter from/in bag of frozen fries.

Adobo Caterer, 1807 Sedona St.
Date inspected: June 14
Violations: One high-risk violation for poor personal hygiene — no towels available inside dispenser at hand washing sink. Corrected: Two moderate-risk violations, one for improper holding — calibrate all of the food-grade thermometers; one for contaminated equipment — cutting board was not properly cleaned and sanitized after use.

Violations: One high-risk violation for poor personal hygiene — no hot water available at hand washing sink in the meat market. One low-risk violation for ventilation/lighting — light not shielded, no protective cover in the meat market.

Notes: Overall, kitchen looks clean. QAT sanitizing solution in the three-compartment sink is at 300 ppm, good. Test strips are available. Hand sinks in the main kitchen are placed so close to food prep/storage. Splashguards must be provided to shield from cross-contamination.

Corrected, destroyed; one for storage — raw been stored above vegetables, chicken stored above beef. Corrected. Two moderate-risk violations, one for improper holding — thermometer not accurate, calibrated to 32 degrees; one for contaminated equipment — shelves made of hard OSB wood, must be sealed. Remove current shelves. Two low-risk violations, one for administration — current permit not posted; one for ventilation/lighting — inadequate ventilation, excessive grease on walls and ceiling and other surfaces.

Violations: One high-risk violation for poor personal hygiene — access to hand sink was blocked with fan. Corrected. Splashguard for this sink must be provided within 10 days. One low-risk violation for floors/walls/ceilings — the walls by the hand sink/food prep area is stained. Cover with non-absorbent materials.
Notes: Checked the facility for roaches, did not see any live ones. Saw a dead one in the women’s restroom. Facility is complying wit what they are told to do. Kitchen floors looks clean. Pest control company had this facility sprayed on June 11.
