Date inspected: Feb. 20
Violations: Three high-risk violations. Sanitizer solution not at proper levels, which was corrected at time of inspection. Ice scoop needs its own container. No floor drain in three-compartment sink. Two moderate-risk violations. Needs 2-inch air gap in between three-compartment sink and the dishwasher, must get that fixed within four weeks. Four low-risk violations. Hood and vents are missing filters. Back door needs seal at the bottom. Screen needs to be replaced at back door. Linoleum needs to be replaced.

Violations: Two moderate-risk violations. Floors in prep area are cracked, a repeat violation from last year. Food equipment has dust and old food build up on all sides, rusted equipment shall be made smooth and nonabsorbent to clean and non-toxic. Vents and fans have dust and mold build up. One low-risk violation. No ceiling tiles over prep area.

Albertson’s-Bakery, 600 N. Guadalupe St.
Date inspected: Feb. 24
Violations: Four high-risk violations. Employee did not wash hands before putting on gloves, which was corrected at time of inspection. Ice condensation is pooling onto food product. Floors in walk in freezer have heavy dark grime build up, door handles have food build up. Three-compartment sink has a leak and it is not being used correctly to sanitize dishes. Two moderate-risk violations. First aid supplies are stored over food storage area, should be stored in a designated area away from food and equipment.

Violations: Four high-risk violations. Employee did not wash hand before putting on gloves, which was corrected on-site during time of inspection. Roasted turkey temperature in danger zone. Can opener has metal shavings and grime build up. Scale has green growth on the side. Dirty mop bucket of water in the middle of food processing area. Slicer not sanitized between uses. Hot water handle is broken at handwashing station. Two moderate-risk violations. Probe thermometer is inaccurate. All sides of food equipment have grime and dust build up, vents and fans have dust and mold build up.

Violations: One high-risk violation. Food temperatures in danger zone in display refrigerator unit, violation is repeat of last inspection. No food shall be stored in this unit until temperature is corrected to 41 degrees or below.

Rio Chama Steakhouse, 414 Old Santa Fe Trail
Date inspected: Feb. 28
Violations: Nine high-risk violations. Staff needs training about sanitizer use. Refrigerator not holding proper temperature. Improper food cooling. Signage posted for the following: Wash can opener after each use, do not mixed dented cans with good stock, place ice scoops in designated container. Product with ice build up can transfer to sterile containers. A HAACOP plan for vacuum sealer has been created and forwarded to New Mexico Environment Dept. Pump soap dispensers and towel dispensers for bars and public bathrooms. CO2 equipment in bathroom. Under chip warmers need to be cleaned. Employees are ordered not to put drinks in food prep area. Replacement shelves in walk in and rusted and needs replacing.
