Date inspected: Jan. 27
Violations: Three high-risk violations. Improper storage of eggs, food shall be stored in the order of vegetable and fully cooked meat on top, then fish and pork, followed by whole cuts of beef with ground beef on the bottom, then chicken and eggs at the very bottom. Can opener has metal shavings. Dented cans are mixed in with good stock, shall put “Do Not Use Dented Cans” sign in storage area. Three moderate risk violations. No indicating thermometer, old glass type. Top of food equipment has food build up. No test kit/strips for sanitizer.

San Marcos Café, 3877 N.M. 14
Date inspected: Jan. 27
Violations: Seven high-risk violations. Wet wash cloth out of sanitizer bucket. Food temperature in danger zone in upright refrigerator. Sanitizer is more than 200 ppm. Potential for cross contamination of vegetables by ground beef, which is due to improper food storage. No hand washing station in food prep area. Three-compartment sink used as a hand washing station. No paper towels or soap at hand washing station. No date of preparation on food. Three moderate-risk violations. Improper use of three-compartment sink. All sides of food equipment has grease build up, vents and fans have dust and mold build up. Sugar is in pots on tables, shall be provided only in closed dispensers or in individual packages. Condiments, cream, or half and half shall be provide in individual packages, from an approved dispenser, or shall be individually portioned. Two low-risk violations. Employees have no hair restraints. Restroom door opens up into dining/food prep area. Lights have not protective covers.

Violations: Two high-risk violations. One food handler coughed into hands then continued to prep food. Air gaps need to be 1 inch in between hand sinks. Three moderate-risk violations. Food handler seen washing knife in hand sink. Drain line not shielded in cooler. Utensils not stored correctly. Dry erase board hung over baking prep area. Two low-risk violation. Three lights not operating. Dish washing rocks stored on floor.

Violations: One low-risk violation. Ceiling and wall in prep area is absorbable and not smooth.

Violations: Three high-risk violations. Milk held at improper temperature, which was destroyed and corrected at time of inspection. Hard surface sanitizer above 200 ppm, but was corrected at time of inspection. Thermometers not calibrated. Two moderate-risk violations. Utensils stored improperly. Dorm style refrigerator not certified. Two low-risk violations. Dishwasher has hard scale build up, which was corrected at time of inspection. Need to submit variance for toilet room doors.

Violations: One moderate-risk violation. The dish washing machine hot sanitizer gauges are not working, which has to be fixed within 10 days. Food establishment permit was not posted in a conspicuous place, which was corrected at time of inspection.

Talin Market Santa Fe, 505 Cerrillos Road
Date inspected: Feb. 3
Violations: Three moderate-risk violations. Chlorine test strips are not available for the dishwasher in noodle bar area. Stem thermometers to monitor hot food are not available. Reach in refrigerator is not NSF approved, must be replaced within 90 days. Plastic serving ware were stored on the floor and must be six inches off the ground.
Status of Establishment: Approved. Follow up required on May 3. Management must post wash, rinse and sanitizer stickers on the three-compartment sinks.

Whole Foods Market, Produce, 1090 St. Francis Drive
Date inspected: Feb. 4
Violations: One moderate-risk violation. Thermometers in juice refrigerator unit and produce display unit are not working and need to be replaced. One low-risk violation. Metal walls in walk-in are rusted and look old. Other walls by vegetable wash need to be easily clean and non-absorbent. Both violation need to be fixed within 60 days.
