The following restaurant inspection reports were provided by the New Mexico Environment Department.

Santa Fe

Absolute Nirvana Tea Room, 106 Faithway St.
Date inspected: Feb. 6
Violations: None
Notes: Temperatures good. Always store eggs (raw) on the bottom shelves in the refrigeration unit.
Status of establishment: Approved

Babalou’s Cocina Cubana, 3810 Hwy. 14
Date inspected: Feb. 7
Violations: One low-risk violation for floors/walls/ceilings — the floor tiles by the ice machine are peeling and tiles are loose. Seal.
Notes: All the temperature logs, cooling procedure temperature logs, recurring temperature logs are all kept. Facility kitchen looks extremely clean. Water test analysis is required in office by Feb. 28. Temperatures are very good. Dishwashing sanitizing solution is good at 50 ppm.

Chocolate Maven Bakery, 821 W. San Mateo Road
Date inspected: Feb. 5
Violations: One for labeling requirements — only approved for non-PHF baked items, no operational plans on file for baked goods. Must submit one plan for review. File incomplete, manager to affect corrections to file. Labels do not meet requirements.
Notes: Unable to review operational plan adherence, none on file. Allergens should be identified on all labels and must be listed as ingredients. NMED will work with facility to develop all issues to up-to-date file. Processing only non-PHF items. Exterior doors are not tight fitting; gap beneath doors. Bakers hand sink has food particles in drain. Only for hand washing. Corrected. Scoops and spatula held in non-running water/sanitizer. Walls not smooth or easily cleanable. No base coring in some areas along floor and wall. Inadequate light in many areas. Openings in walls around conduit. Conduit exposed on walls. Improper light shielding. Ceiling does not meet requirements, not smooth, easily cleanable. No operational plans on file, NMED to work with facility to complete. No recall procedure. No batch cooling on file or in use.

Chris Café, 3568 Cerrillos Road
Date inspected: Feb. 11
Violations: One high-risk violation for improper holding — the under counter refrigeration unit is not holding proper cold holding temperatures. Green chile stew was at 46 degrees; pork chop adovada was at 46 degrees. Air temperature was at 48 degrees.
Notes: Provide metal shelves for the under-counter refrigeration unit, so food items can be separated.

El Castillo Retirement restaurant, 250 E. Alameda St.
Date inspected: Feb. 8
Violations: One low-risk violation for floors/walls/ceilings — the wall by the three-compartment sink has cracks all along the three-sink wall. Seal.

Date inspected: Feb. 7
Violations: Two high-risk violations, one for improper holding — beans at 150 degrees, potatoes at 150 degrees, roast beef at 155 degrees. Corrected. One for poor personal hygiene — no paper towels at the hand sink. Corrected. Two low-risk violations, one for floors/walls/ceilings — storage area ceiling has rust and peeling paint and openings around support rods. One for ventilation/lighting — condensation on ceiling vent behind prep line, inadequate ventilation.

Inn of the Five Graces, 150 E. DeVargas St.
Date inspected: Feb. 11
Violations: Two moderate-risk violations for contaminated equipment — all equipment (refrigerators, freezers) dirty. Food containers were not properly cleaned and sanitized. Improper dishwashing process. One low-risk violation for storage — food items stored on the floor.

Jarochos Taqueria, 2820 Cerrillos Road
Date inspected: Feb. 11
Violations: One moderate-risk violation for storage — unlabeled container with white substance from the kitchen. One low-risk violation for storage — food stored on the floor.

Ken and Patty Adam Center, 16 Avenida Torredo
Date inspected: Feb. 5
Violations: One high-risk violation for contaminated equipment — wiping cloths unsanitary. No presence of sanitizer. Corrected. One moderate-risk violation for contaminated equipment — can opener was not properly cleaned and sanitized after use. One low-risk violation for administration — NMED food service permit expired. Notify NMED by Feb. 11.

La Posada de Santa Fe, 330 E. Palace Ave.
Date inspected: Feb. 6
Violations: One moderate-risk violation for contaminated equipment — Most of the cutting boards in the kitchen are old and discolored. Replace all cutting boards in kitchen. The hand sink requires for the banquet kitchen has been provided. Three low-risk violations, one for administration — food permit was not posted. Corrected. One for floors/walls/ceilings — several area walls in kitchen are cracking and peeling. Wall by dry storage room, by metal shelf for utensils by produce cooler, Seal these walls within four months. One for storage — the dish basket was stored on the floor in the banquet kitchen. Store above six inches.

Date inspected: Feb. 11
Violations: Two moderate-risk violations for contaminated equipment — improper storage of clean cups and utensils. No sanitizer test kit available to test concentration of sanitizing solution. One low-risk violation for poor personal hygiene — employee must have hair restraint.

Lucci’s Piatto, 3470 Zafarano
Date inspected: Feb. 7
Violations: Boxes of canola oil containers were blocking access to hand sink. Corrected. One low-risk violation for ventilation/lighting — exhaust hood filters are greasy and also the vent above the dish machine is dusty. Clean.

Date inspected: Feb. 5
Violations: Two moderate-risk violations for contaminated equipment — can opener and food scales were not cleaned and sanitized after use. Ice scoops were not properly cleaned and sanitized. One low-risk violation for storage — improper storage of clean cutting boards (on the floor) possible contamination.

Date inspected: Feb. 8
Violations: One high-risk violation for improper holding — improper holding temperature of salad dressing, 60 degrees. One moderate-risk violation for contaminated equipment — meat slicer and salad spinner were not properly cleaned and sanitized. One low-risk violation for ventilation/lighting — light out of order inside vent hood.

Santa Fe High School NJROTC, 2100 Yucca St.
Date inspected: Feb. 11
Violations: One high-risk violation for poor personal hygiene — no hot water at hand sink. Must provide a written response when corrected, via fax or email. Two low-risk violations, one for administration — permit not posted. One for storage — packaged food items held on floor.

Santa Fe Tortilla Company, 18 Bisbee Court
Date inspected: Feb. 8
Violations: One moderate-risk violation for contaminated equipment — conveyor belts broken, need repair. Some metal parts missing. Two low-risk violations, one for floors/walls/ceilings — walls broken, need repair in many areas of facility. One for ventilation/lighting — light not protected in the cooling room.

San Martin Restaurant, 4250 Cerrillos Road
Date inspected: Feb. 5
Violations: Two high-risk violations for improper holding — improper hot holding, green chile at 112 degrees, corrected. Improper cold holding, milk at 70 degrees, corrected. One moderate-risk violation for contaminated equipment — food container was not properly cleaned and sanitized. One low-risk violation for ventilation/lighting — vent hood dirty, unsanitary condition, grease dripping from the filters.

SUP Good Eats, 559 W. Cordova
Date inspected: Feb. 6
Violations: One high-risk violation for inadequate cooking/cooling — most of the food items in walk-in cooer were not being cooled down properly. Most soups in here were about 43-45 degrees.
Notes: Use metal, shallower pan for cooling. Use ice instead of regular cold water. Ice bath was used during inspection and the frozen paddles were put into the buckets of soups.
