Violations: One high-risk violation. Box of raw eggs were stored in the soda display refrigeration unit, this type of refrigeration are not used to store hazardous food items. Two low-risk violations. Employee jackets were handing in the dry storage shelves, management must provide dressing area in the restroom areas. The walls under the two-compartment sink is peeling and loose.

Violations: Two moderate-risk violations. Some food items were not cooled properly before refrigeration. Cutting board in kitchen is old and stained, must be replaced within one month. Two low-risk violations. The ice machine vent was dirty. Kitchen floors are messy, but were cleaned at the time of inspection.

Violations: Three high-risk violations. Refrigerator cooling unit is not maintaining temperatures of 41 degrees or less. Employee drink has the potential to cross contaminate food prep area. Ice from condensation or from a leak in the condenser unit is pooling onto food products and/or containers, ice is not a potable water source.

Violations: Nineteen high-risk violations. Can opener has food build up and metal shavings. Dented cans mixed in with good stock, shall post a do not use dented cans sign in can storage area. Improper storage of meats, food shall be stored in proper order: vegetable and fully cooked food on top, then fish and pork, followed by whole cuts of beef with ground beef on the bottom followed by chicken and eggs at the very bottom. Ice scoops stored on top and inside of machine, must be stored in dish washable container. Exposed insulation over dish racks. Spice containers have food build up on them. Ice tea machine is missing cover. No sneeze protection over buffet line. Equipment stored under unshielded drainage pipes. Food dates of preparation must be used within seven days. Improper cooling of chicken soup in five gallon buckets. Refrigerator units are maintaining improper temperatures. No test strips or thermal labels for high temperature dishwashing machine. Water is pooling on the floor in prep area under ice machine. Employee handled ready-to-eat foods with bare hands, staff must wash hand in conjunction with glove and utensil use. Chemical stray bottles are not labeled. Employee drinks in food prep area have potential for cross contamination. Wet rag out of sanitizer bucket. Hand washing station has in it. Three moderate-risk violations. Refrigerator door is rusted and must be made smooth nonabsorbent to clean and non-toxic. Upright glass door refrigerator not approved for onsite prepared foods. All sides of food equipment has food and grease build up. Vents and fans have dust and mold build up. One low–risk violation. Toilet paper roll dispensers are missing covers.

Santa Fe Brewery Company, 35 Fire Place
Date inspected: Jan. 21
Violations: Six high-risk violations. Three-compartment sink is directly connected to drain line. Dishwashing machines, refrigerators, food sinks, steam kettles, potato peelers, ice storage bins, ice machines and similar food-contact equipment shall not be directly connected to the drainage system. Each waste pipe from such equipment shall discharge into an open accessible waste sink, floor drain, or other suitable fixture. Indirect connections of drain lines from other equipment used in the preparation, washing of food, backflow of sewage may occur. No soap at hand washing station. No paper towels or dispenser in the bathroom. Exposed insulation over processing area and tap room. One moderate-risk violation. Keg room walls are not smooth, shall be made non-toxic and non-absorbent. Two low-risk violations. All fixtures shall be of sanitary design and readily cleanable and shall be kept clean and in good repair. Restroom door opens up into processing area.

Violations: One high-risk violation. No hot water available during inspection for hand washing, rinsing and sanitizing, food will not be served until hot water is restored. Current foods on display were OK to serve, but no new foods were made. One moderate-risk violation. Three-compartment sink inaccessible for regular use, blocked by boxes and equipment. Two low-risk violations. Hair restraints must be used during food prep and service.
Status of Establishment: Voluntary closure in effect. Basic food training needed for staff. Follow up required on Jan. 9.

Stop and Eat Drive In, 208 East Oñate

Violations: Three low-risk violations. Water damage to floor due to recent water main break, need tile and floor replacement. Need to have staff wear hair restraints. Walls and ceilings need repainting to make easier to clean.
