Violations: One high-risk violation for poor personal hygiene — restroom needs paper towels. Corrected.

Santa Fe

 

Acequia Madre Elementary School, Acequia Madre St.

Date inspected: March 8

Violations: One moderate-risk violation for contaminated equipment — no test strips were available to check the sanitizing solution. One low-risk violation for floors/walls/ceilings — some of the floor tiles are missing under the two-compartment sink.

Violations: One high-risk violation for inadequate cooking/cooling — hot food items are not being cooled down properly before storage in the refrigerators. Corrected. Facility taught how to cool foods down using ice bath. One moderate-risk violation for contaminated equipment — cutting boards in kitchen are discolored. Clean and sanitize daily with bleach water. Two low-risk violations, one for floors/walls/ceilings — the employee toilet bowl was filthy. Clean daily. One for ventilation/lighting — the vents above the dishwasher are dusty. Clean.

Violations: One low-risk violation for ventilation/lighting — the vents above the dishwasher are dusty. Clean.

Don Gaspar Inn, 623 Don Gaspar

Date inspected: March 11

Violations: One low-risk violation for storage — cases of bottled water were stored on the floor.

El Parasol Southside, 298 Dinosaur Trail

Notes: One of the cleanest kitchens in Santa Fe. Facility is kept in squeaky-clean condition. From equipment surfaces to employees’ clothing, everything looks clean. Label bulk food containers.

El Parasol Southside catering, 298 Dinosaur Trail

Date inspected: March 7

Violations: One low-risk violation for administration — food establishment permit was not available. Must post in conspicuous area of restaurant. 

Notes: Uses same kitchen as the restaurant. Plenty of Cambro coolers were available for the catering services. Also, facility has a refrigerated van. This looks clean, but it was not in use at inspection time.

Galisteo Bistro, 224 Galisteo St.

Status of establishment: Approved, no follow-up required.

 

Guadalupe Café, 422 Old Santa Fe Trail

Date inspected: March 6

Violations: One high-risk violation for improper holding — Hobart refrigerator for holding foods at 48 degrees, dressing and muffin mix. Corrected onsite. Foods will be moved to another refrigeration unit. One moderate-risk violation for animals/vermin/openings — doors kept open. Keep doors closed to prevent mice/insects from entering facility. Floors need cleaning. Owner states all floors in facility cleaned daily.

Il Piatto, 95 W. Marcy St.

Date inspected: March 5

Violations: Three high-risk violations, one for improper holding — veggies/salad fixings/salsa, holding at 46 degrees. Need to be kept at 41 degrees or less. Chicken cooling at room temp. Must keep 41 degrees or less, or 141 degrees. Corrected on site. Manager advised staff to mitigate temperature holding. One violation for contaminated equipment — can opener found dirty. Corrected on site. One violation for poor personal hygiene — hand soap dispenser broken. Violation corrected on site by bringing bottled soap to hand sink. Two moderate-risk violations for contaminated equipment — cutting boards need replacing, very scarred up, harbor bacteria. Replace often or resurface. Need to resurface/replace as soon as possible. No test kits for sanitizing testing. Need to keep kits present for testing sanitizer concentration. Two low-risk violations, one for poor personal hygiene — all staff in back/kitchen need hair restraints. Baker not wearing hair restraint. One for floors/walls/ceilings — walls/ceilings need thorough cleaning. Moldy, dusty, need cleaning as soon as possible.

Mangiano Pronto, 228 Old Santa Fe Trail

Date inspected: March 6

Violations: One high-risk violation for improper holding — prop unit, artichokes holding at 48 degrees. Keep at 41 or less. Corrected on site. Manager said unit needs to be moved away from wall, servicing coils, food inside unit 38-42 degrees.

Pink Adobe, 406 Old Santa Fe Trail

Date inspected: March 5

Violations: One high-risk violation for poor personal hygiene — the main hand sink in kitchen is not in working order. Faucets are broken. Fix within one week. One low-risk violation for floors/walls/ceilings — the wall by the prep/cooling area counter is peeling and also the wall by the ice machine is peeling really badly. Fix these walls, have them sealed within 90 days.

Pink Adobe bar, 406 Old Santa Fe Trail

Date inspected: March 5

Violations: One moderate-risk violation for improper holding — thermometer was not available for this refrigeration unit. Provide thermometers for all refrigeration units. Bar uses the restaurant dishwasher.

Rabbit Road Kitchen, 26 Old Galisteo Way

Date inspected: March 1

Violations: Two high-risk violations, one for improper holding — sandwiches holding at 46 degrees. Corrected. Placed in refrigerated bags to deliver. One for poor personal hygiene — paper towel dispenser was not dispensing towels. Corrected. One moderate-risk violation for animals/vermin/openings — screen door needs to seal at bottom/top/sides to prevent mice/flies from having access to facility. One low-risk violation for poor personal hygiene — apron needs washing. Plan on using clean apron each time you operate.

Rancho Viejo Village Market, 55 Cañada del Rancho

Date inspected: March 1

Violations: One low-risk violation for storage — cases of soda were stored on the floor in the dry storage. Corrected.

Date inspected: March 6

Violations: One moderate-risk violation for contaminated equipment — home-type appliances present. Unsure if they are used for business. If so, they need to be replaced with commercial units ANSI/NSF.
